Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
- Wrap each pineapple chunk with a half slice of bacon and secure with a toothpick.
- Place bacon-wrapped pineapple on the wire rack.
- In a small bowl, mix brown sugar and cayenne pepper (if using).
- Sprinkle the brown sugar mixture evenly over the bacon-wrapped pineapple bites.
- Bake for 25–30 minutes or until the bacon is crispy and caramelized.
- Let cool slightly before serving.
