Ingredients

Scale

Crust

  • 1 ½ cups vanilla wafer cookie crumbs
  • 6 tablespoons unsalted butter, melted

Cheesecake Filling

  • 24 oz cream cheese (softened)
  • 1 ¼ cups granulated sugar
  • 1 tablespoon vanilla extract
  • ¼ cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • 6 Little Debbie Christmas Tree Cakes

Topping

  • 4 oz white chocolate, chopped
  • ¼ cup heavy cream
  • Green sprinkles
  • Red icing (for decorating stripes)

Instructions

  • Prep the Crust
Preheat oven to 350°F (175°C). Mix cookie crumbs and melted butter until well combined. Press into the bottom of a 9-inch springform pan, then chill in the fridge while preparing the filling.

  • Make the Cheesecake Filling
Beat the softened cream cheese until smooth. Add sugar, vanilla, and sour cream, mixing until combined. Add eggs one at a time on low speed to avoid air bubbles.
Fold in four Little Debbie cakes (cut into small pieces) to the batter.

  • Assemble and Bake
Pour half of the filling into the crust, then place two more whole Little Debbie cakes on top. Cover with remaining batter. Tap the pan lightly to release any air bubbles.
Bake in a water bath for 55-65 minutes, or until the edges are set and the center jiggles slightly. Turn off the oven, crack the door, and cool for 1 hour. Chill for at least 5 hours in the fridge.

  • Decorate
Melt the white chocolate and cream together, stirring until smooth. Spread ganache on the cooled cheesecake and sprinkle with green sanding sugar. Use red icing to create the signature Christmas tree stripes.

Notes

  • Use room-temperature ingredients for a smooth filling.
  • Avoid overmixing the batter to reduce the chance of cracks.
