Description

Creamy Zuppa Toscana is a comforting Italian-inspired soup made with savory sausage, tender potatoes, kale, and crispy bacon simmered in a rich, creamy broth.


Ingredients

  • 1 pound Italian sausage
  • 4 slices bacon, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cups russet potatoes, sliced thin
  • 1 cup heavy cream
  • 3 cups chopped kale
  • Salt and black pepper, to taste
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Grated Parmesan cheese, for serving

Instructions

  1. In a large pot or Dutch oven over medium heat, cook chopped bacon until crispy. Remove with a slotted spoon and set aside, leaving the bacon fat in the pot.
  2. Add Italian sausage and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
  3. Add chopped onion and cook for 5 minutes until softened. Stir in garlic and cook for another minute.
  4. Pour in chicken broth and add sliced potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until potatoes are tender.
  5. Stir in heavy cream and chopped kale. Simmer for another 5 minutes until kale is wilted.
  6. Season with salt, black pepper, and red pepper flakes if desired.
  7. Ladle into bowls, garnish with crispy bacon and grated Parmesan cheese, and serve hot.

Notes

  • Use mild or spicy Italian sausage based on your preference.
  • Substitute spinach for kale if you like a milder green.
  • Add more cream for a richer soup.
