Description

This Creamy Zucchini Sauce is light, velvety, and packed with fresh flavor! Made with sautéed zucchini, garlic, and a touch of cream, it’s the perfect sauce for pasta, grilled chicken, or roasted vegetables. A delicious and easy way to use up summer zucchini!


Ingredients

  • 2 medium zucchinis, grated or finely chopped
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream (or half-and-half for a lighter option)
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/2 tsp Italian seasoning (optional)
  • 1/4 tsp red pepper flakes (optional, for a little heat)

 

  • 1/2 cup pasta water (if using for pasta)

Instructions

  1. Sauté the Zucchini:

    • Heat olive oil in a pan over medium heat.
    • Add garlic and sauté for 30 seconds until fragrant.
    • Stir in grated zucchini and cook for 5-7 minutes, stirring occasionally, until softened and slightly golden.
  2. Make it Creamy:

    • Reduce heat to low and stir in heavy cream, Parmesan, salt, pepper, and Italian seasoning.
    • Let it simmer for 2-3 minutes, stirring frequently, until thick and creamy.
  3. Adjust Consistency:

    • If using for pasta, add reserved pasta water a little at a time to reach desired consistency.
  4. Serve & Enjoy:

    • Toss with pasta, spoon over grilled chicken, or serve as a dip with crusty bread.

Notes

  • Lighter Option: Swap heavy cream for Greek yogurt or milk.
  • Make it Vegan: Use coconut cream and dairy-free Parmesan.
