Description

Creamy Tuscan Shrimp is a rich and flavorful dish featuring succulent shrimp in a garlic Parmesan cream sauce with sun-dried tomatoes and spinach.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes or 1/2 cup sun-dried tomatoes, chopped
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 tbsp unsalted butter

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add shrimp and season with salt and pepper. Cook until pink and cooked through, about 2–3 minutes per side. Remove shrimp and set aside.
  2. In the same skillet, add butter and minced garlic. Sauté for about 1 minute until fragrant.
  3. Add sun-dried tomatoes and cook for another minute.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and red pepper flakes, if using.
  5. Once the sauce thickens slightly, add spinach and stir until wilted.
  6. Return the shrimp to the skillet and toss to coat with the sauce.
  7. Simmer for another 2–3 minutes until everything is heated through.
  8. Serve immediately over pasta, rice, or with crusty bread.

Notes

  • Use fresh shrimp for best flavor.
  • You can substitute half-and-half for a lighter version.
  • Serve with your choice of pasta or a side of steamed vegetables for a low-carb option.
