Creamy Tuscan Shrimp is a rich and flavorful dish featuring succulent shrimp in a garlic Parmesan cream sauce with sun-dried tomatoes and spinach.

- 1 lb large shrimp, peeled and deveined
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes or 1/2 cup sun-dried tomatoes, chopped
- 2 cups baby spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- 1 tbsp unsalted butter
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add shrimp and season with salt and pepper. Cook until pink and cooked through, about 2–3 minutes per side. Remove shrimp and set aside.
- In the same skillet, add butter and minced garlic. Sauté for about 1 minute until fragrant.
- Add sun-dried tomatoes and cook for another minute.
- Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and red pepper flakes, if using.
- Once the sauce thickens slightly, add spinach and stir until wilted.
- Return the shrimp to the skillet and toss to coat with the sauce.
- Simmer for another 2–3 minutes until everything is heated through.
- Serve immediately over pasta, rice, or with crusty bread.
Notes
- Use fresh shrimp for best flavor.
- You can substitute half-and-half for a lighter version.
- Serve with your choice of pasta or a side of steamed vegetables for a low-carb option.
