  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 1/2 cup chicken broth (or vegetable broth)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional, for spice)
  • 2 cups fresh spinach
  • 1 tbsp fresh basil, chopped (for garnish)

Instructions

Step 1: Cook the Salmon

  1. Season the salmon fillets with salt, black pepper, garlic powder, and smoked paprika.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear the salmon for 3-4 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.

Step 2: Make the Creamy Sauce

  1. In the same skillet, sauté garlic for 30 seconds, until fragrant.
  2. Add sun-dried tomatoes and cook for 1 minute.
  3. Pour in chicken broth, scraping up any browned bits from the pan.
  4. Stir in heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer for 3-4 minutes until slightly thickened.

Step 3: Add Spinach & Finish

  1. Stir in fresh spinach, cooking until wilted.
  2. Return the salmon fillets to the skillet, spooning the sauce over them.
  3. Simmer for 2 minutes, allowing the flavors to blend.

Step 4: Serve & Enjoy

  1. Garnish with fresh basil and extra Parmesan.
