Ingredients

Scale

For the Steak Bites:

  • 1 1/2 lbs (680g) sirloin steak, ribeye, or filet mignon (cut into 1-inch cubes)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika (optional, for depth of flavor)
  • 2 tbsp olive oil
  • 1 tbsp butter

For the Creamy Garlic Parmesan Sauce:

  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken or beef broth (adds depth of flavor)
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning (or a mix of oregano, thyme, and basil)
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 1 tbsp fresh parsley or basil, chopped (for garnish)

Instructions

Step 1: Cook the Steak Bites

  1. Pat the steak dry with paper towels to ensure a good sear.
  2. Season with salt, pepper, garlic powder, and paprika.
  3. Heat olive oil and butter in a large skillet over medium-high heat.
  4. Add steak cubes in a single layer and sear for 2-3 minutes per side, until golden brown.
  5. Remove steak from the skillet and set aside.

Step 2: Make the Creamy Garlic Parmesan Sauce

  1. In the same skillet, melt butter over medium heat.
  2. Add garlic and sauté for 30 seconds, until fragrant.
  3. Pour in broth, scraping up any browned bits from the pan. Let simmer for 2 minutes.
  4. Stir in heavy cream, Parmesan, salt, pepper, Italian seasoning, and red pepper flakes.
  5. Simmer for 2-3 minutes, stirring occasionally, until the sauce thickens.

Step 3: Combine & Serve

  1. Return steak bites to the skillet and toss in the sauce.
  2. Cook for 1-2 minutes, just to warm the steak through.
  3. Garnish with fresh parsley or basil, then serve immediately.

Serving Suggestions

  • With Mashed Potatoes: The creamy sauce is perfect for drizzling over mashed potatoes.
  • With Pasta: Serve over fettuccine or penne for a luxurious meal.
  • With Roasted Veggies: Pair with asparagus, broccoli, or Brussels sprouts.

  • More flavor? Add sautéed mushrooms or sun-dried tomatoes.
  • Spicier version? Add extra red pepper flakes or a dash of hot sauce.
