  • 1 (20 oz) package cheese tortellini (fresh or frozen)
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 3/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1 tablespoon butter
  • Fresh basil or extra Parmesan for garnish



Instructions

  1. Cook the tortellini:

    • Boil tortellini according to the package instructions. Drain and set aside.
  2. Sauté the garlic & tomatoes:

    • In a large skillet, heat olive oil over medium heat.
    • Add garlic and cook for 30 seconds until fragrant.
    • Stir in cherry tomatoes and cook for 2-3 minutes until softened.
  3. Make the creamy sauce:

    • Pour in heavy cream and broth. Stir in Parmesan cheese, salt, pepper, Italian seasoning, and red pepper flakes.
    • Simmer for 3-4 minutes until thickened.
  4. Add spinach & tortellini:

    • Stir in spinach and cook until wilted (1-2 minutes).
    • Add the cooked tortellini and butter, tossing to coat everything in the creamy sauce.
  5. Serve & enjoy:

    • Garnish with fresh basil and extra Parmesan. Serve warm!
