Description

Creamy sausage and peppers pasta is a rich, flavorful dish combining savory sausage, sweet bell peppers, and a creamy tomato sauce tossed with tender pasta for a comforting meal.


Ingredients

  • 12 oz pasta (penne or rigatoni)
  • 1 tbsp olive oil
  • 1 lb Italian sausage (casings removed)
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package directions. Reserve 1/2 cup pasta water, drain, and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
  3. Add onion and bell peppers to the skillet and sauté until soft, about 5-7 minutes.
  4. Stir in garlic, oregano, and red pepper flakes; cook for 1 minute until fragrant.
  5. Pour in chicken broth and let simmer for 2 minutes, scraping any browned bits from the pan.
  6. Reduce heat to low and stir in heavy cream and Parmesan cheese. Simmer until the sauce is slightly thickened, 3–5 minutes.
  7. Add cooked pasta to the sauce and toss to coat. Add reserved pasta water as needed to loosen the sauce.
  8. Season with salt and pepper to taste. Garnish with fresh parsley and serve warm.

Notes

  • Use spicy or mild sausage based on your preference.
  • For a lighter version, substitute cream with half-and-half or milk.
  • Add spinach or mushrooms for extra veggies.
