- 12 oz pasta (penne or rigatoni)
- 1 tbsp olive oil
- 1 lb Italian sausage (casings removed)
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 cloves garlic, minced
- 1/2 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package directions. Reserve 1/2 cup pasta water, drain, and set aside.
- In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
- Add onion and bell peppers to the skillet and sauté until soft, about 5-7 minutes.
- Stir in garlic, oregano, and red pepper flakes; cook for 1 minute until fragrant.
- Pour in chicken broth and let simmer for 2 minutes, scraping any browned bits from the pan.
- Reduce heat to low and stir in heavy cream and Parmesan cheese. Simmer until the sauce is slightly thickened, 3–5 minutes.
- Add cooked pasta to the sauce and toss to coat. Add reserved pasta water as needed to loosen the sauce.
- Season with salt and pepper to taste. Garnish with fresh parsley and serve warm.
Notes
- Use spicy or mild sausage based on your preference.
- For a lighter version, substitute cream with half-and-half or milk.
- Add spinach or mushrooms for extra veggies.
