Ingredients

  • 1 (20 oz) package cheese tortellini
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 jar (12 oz) roasted red peppers, drained
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp Italian seasoning
  • Salt and black pepper to taste
  • Fresh basil or parsley, chopped (for garnish)
  • Optional: pinch of red pepper flakes for heat

Instructions

  1. Cook tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1–2 minutes until fragrant.
  3. In a blender or food processor, blend roasted red peppers and sautéed garlic until smooth.
  4. Return the purée to the skillet over medium heat. Stir in heavy cream, Parmesan, Italian seasoning, salt, and pepper. Simmer for 3–5 minutes until slightly thickened.
  5. Add cooked tortellini to the sauce and toss gently to coat.
  6. Garnish with chopped basil or parsley and red pepper flakes if desired. Serve warm.
