- 12 oz pasta (penne, fettuccine, or your choice)
- 1 tablespoon olive oil
- 1 cup broccoli florets
- 1 cup sliced bell peppers
- 1/2 cup sliced carrots
- 1/2 cup cherry tomatoes, halved
- 1 zucchini, sliced
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon butter
- 2 tablespoons chopped fresh basil (optional)
Instructions
- Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add broccoli, carrots, and bell peppers. Cook for 4–5 minutes until slightly tender.
- Add zucchini, cherry tomatoes, and garlic. Cook for another 3–4 minutes until all vegetables are tender.
- Stir in butter and heavy cream. Bring to a simmer, then add Parmesan cheese. Stir until melted and sauce is creamy. Season with salt and pepper.
- Add cooked pasta to the skillet and toss to combine. Use reserved pasta water to thin the sauce if needed.
- Garnish with fresh basil if desired and serve warm.
