A rich and comforting Tuscan-inspired soup made with tender potatoes, kale, Italian sausage, and a creamy Parmesan broth, perfect for a cozy meal.

- 1 tablespoon olive oil
- 1 pound Italian sausage (mild or spicy), casings removed
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3 cups russet potatoes, peeled and diced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups chopped kale
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Crushed red pepper flakes (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon, about 6–7 minutes. Remove excess fat if needed.
- Add onion and cook for 3 minutes until softened, then stir in garlic and cook for 1 more minute.
- Pour in chicken broth and add diced potatoes, oregano, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes are tender.
- Stir in chopped kale and cook for 3–4 minutes until wilted.
- Reduce heat to low and stir in heavy cream and Parmesan cheese. Simmer for another 2–3 minutes until cheese is melted and soup is creamy.
- Adjust seasoning if needed and add red pepper flakes for a bit of heat, if desired.
- Serve hot, garnished with extra Parmesan or fresh herbs.
Notes
- Substitute Italian sausage with turkey sausage for a leaner version.
- Use baby spinach if kale is not available.
- For a thicker soup, mash a few potatoes in the pot before adding the cream and cheese.
