- 2 boneless, skinless chicken breasts (about 1 lb or 450 g)
- 8 oz (225 g) penne pasta
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup (240 ml) heavy cream
- 1 cup (100 g) grated Parmesan cheese
- 1/2 cup (120 ml) chicken broth
- 2 tbsp unsalted butter
- Salt and pepper to taste
- 1 tbsp chopped fresh parsley (optional)
Instructions
- Cook penne pasta according to package directions; drain and set aside.
- Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken until golden and cooked through, about 5-7 minutes per side. Remove and slice.
- In the same skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds until fragrant.
- Deglaze the pan with chicken broth, then stir in heavy cream and bring to a simmer.
- Reduce heat to low and mix in Parmesan cheese, stirring until sauce thickens.
- Add sliced chicken and penne to the sauce. Toss to coat evenly. Adjust seasoning as needed.
- Serve garnished with chopped parsley if desired.

- Use freshly grated Parmesan for best texture and flavor.
- Reserve some pasta water to thin the sauce if needed.
- For extra flavor, add sautéed mushrooms or spinach.
