Scale
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1 small onion, finely diced
- 3 garlic cloves, minced
- 1 lb (450 g) mushrooms, sliced (button, cremini, or a mix)
- 1/2 tsp dried thyme (or 1 tsp fresh thyme leaves)
- 1/2 tsp smoked paprika (optional)
- Salt and pepper, to taste
- 1/2 cup dry white wine (or chicken/vegetable broth)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
1. Sauté the Aromatics:
- Heat the butter and olive oil in a large skillet over medium heat.
- Add the diced onion and sauté until softened, about 3 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
2. Cook the Mushrooms:
- Add the sliced mushrooms to the skillet.
- Cook, stirring occasionally, for 7-8 minutes, until the mushrooms release their moisture and begin to brown.
3. Add Seasonings and Deglaze:
- Stir in the thyme, smoked paprika (if using), salt, and pepper.
- Pour in the white wine (or broth) to deglaze the pan, scraping up any browned bits from the bottom.
- Let it simmer for 2-3 minutes until the liquid reduces slightly.
4. Make It Creamy:
- Lower the heat to medium-low and pour in the heavy cream. Stir well to combine.
- Simmer gently for 5 minutes, stirring occasionally, until the sauce thickens.
5. Add Parmesan and Serve:
- Stir in the Parmesan cheese until melted and incorporated.
- Taste and adjust seasoning if needed.
- Garnish with fresh parsley before serving.
Serving Suggestions:
- Serve over cooked pasta, rice, or mashed potatoes.
- Use as a creamy sauce for chicken or steak.
- Enjoy as a standalone dish with crusty bread to soak up the sauce.
Notes
- Mushroom Choices: For extra flavor, use a mix of mushrooms like shiitake, oyster, or portobello.
- Vegan Option: Replace the butter with vegan butter or olive oil, the heavy cream with coconut milk or cashew cream, and the Parmesan with nutritional yeast.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop.
