These Creamy Mushroom Chicken Meatballs are juicy, flavorful, and smothered in a rich, garlicky mushroom cream sauce. Made with ground chicken and fresh herbs, they’re a comforting dinner option that feels fancy but is super easy to make. Serve them over your favorite starch for a warm, satisfying meal.


Ingredients

For the meatballs:

  • 1 lb ground chicken

  • 1/4 cup breadcrumbs

  • 1/4 cup grated Parmesan cheese

  • 1 egg

  • 2 cloves garlic, minced

  • 1 tablespoon fresh parsley, chopped (or 1 tsp dried)

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 tablespoon olive oil (for browning)

For the creamy mushroom sauce:

  • 2 tablespoons butter

  • 8 oz mushrooms, sliced (button or cremini)

  • 2 cloves garlic, minced

  • 1/2 teaspoon thyme (dried or fresh)

  • 1/2 cup chicken broth

  • 3/4 cup heavy cream

  • 1/4 cup grated Parmesan cheese

  • Salt and pepper, to taste

  • Fresh parsley, for garnish (optional)


Instructions

  1. Make the meatballs:

    • In a large bowl, mix ground chicken, breadcrumbs, Parmesan, egg, garlic, parsley, onion powder, salt, and pepper until just combined.

    • Roll into 1-inch meatballs.

  2. Cook the meatballs:

    • Heat olive oil in a large skillet over medium heat.

    • Brown the meatballs for about 5–6 minutes, turning occasionally to cook all sides.

    • Remove meatballs and set aside (they don’t need to be fully cooked yet).

  3. Make the mushroom sauce:

    • In the same skillet, melt butter and add mushrooms. Cook for 5–7 minutes until browned and soft.

    • Add garlic and thyme, cook for another minute.

    • Stir in chicken broth and bring to a simmer.

    • Reduce heat and stir in heavy cream and Parmesan. Simmer until slightly thickened, about 3–4 minutes. Season with salt and pepper to taste.

  4. Simmer the meatballs:

    • Return the meatballs to the skillet and simmer in the sauce for 10–12 minutes, or until fully cooked and tender.

  5. Serve:

    • Sprinkle with fresh parsley and serve over mashed potatoes, egg noodles, or rice.


Notes

  • You can substitute ground turkey if you prefer.

  • For a lighter version, use half-and-half instead of heavy cream.

  • These meatballs also work great as an appetizer with toothpicks!
