Ingredients
For the meatballs:

1 lb ground chicken

1/4 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped (or 1 tsp dried)

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil (for browning)
For the creamy mushroom sauce:

2 tablespoons butter

8 oz mushrooms, sliced (button or cremini)

2 cloves garlic, minced

1/2 teaspoon thyme (dried or fresh)

1/2 cup chicken broth

3/4 cup heavy cream
-
1/4 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, for garnish (optional)
Instructions

Make the meatballs:

In a large bowl, mix ground chicken, breadcrumbs, Parmesan, egg, garlic, parsley, onion powder, salt, and pepper until just combined.

Roll into 1-inch meatballs.

Cook the meatballs:

Heat olive oil in a large skillet over medium heat.

Brown the meatballs for about 5–6 minutes, turning occasionally to cook all sides.

Remove meatballs and set aside (they don’t need to be fully cooked yet).

Make the mushroom sauce:

In the same skillet, melt butter and add mushrooms. Cook for 5–7 minutes until browned and soft.

Add garlic and thyme, cook for another minute.

Stir in chicken broth and bring to a simmer.

Reduce heat and stir in heavy cream and Parmesan. Simmer until slightly thickened, about 3–4 minutes. Season with salt and pepper to taste.

Simmer the meatballs:

Return the meatballs to the skillet and simmer in the sauce for 10–12 minutes, or until fully cooked and tender.
