- 1 lb Italian sausage (mild or spicy)
- 1 tbsp olive oil (if needed)
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 cups baby spinach
- 4 cups chicken broth
- 1 cup heavy cream
- 1 package (16 oz) potato gnocchi
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley for garnish (optional)
Instructions
- In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned and cooked through. Remove excess grease if needed.
- Add diced onion and carrots to the pot and sauté for 5 minutes until softened.
- Stir in garlic and Italian seasoning, cook for another minute.
- Pour in the chicken broth and bring to a simmer.
- Add gnocchi and cook according to package instructions, usually 3–5 minutes, until they float.
- Reduce heat to low and stir in heavy cream and spinach. Simmer for 2–3 more minutes until spinach is wilted and soup is heated through.
- Season with salt and pepper to taste. Stir in Parmesan cheese if using.
- Serve hot, garnished with fresh parsley.

- Use turkey or chicken sausage for a lighter version.
- Add red pepper flakes for a spicier kick.
- Soup thickens as it sits; add more broth or cream when reheating if needed.
