Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil (if needed)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 cups baby spinach
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 package (16 oz) potato gnocchi
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned and cooked through. Remove excess grease if needed.
  2. Add diced onion and carrots to the pot and sauté for 5 minutes until softened.
  3. Stir in garlic and Italian seasoning, cook for another minute.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add gnocchi and cook according to package instructions, usually 3–5 minutes, until they float.
  6. Reduce heat to low and stir in heavy cream and spinach. Simmer for 2–3 more minutes until spinach is wilted and soup is heated through.
  7. Season with salt and pepper to taste. Stir in Parmesan cheese if using.
  8. Serve hot, garnished with fresh parsley.

  • Use turkey or chicken sausage for a lighter version.
  • Add red pepper flakes for a spicier kick.
