- 8 oz pasta (spaghetti, fettuccine, or penne)
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream (or half & half)
- 1/2 cup whole milk
- 3/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon Italian seasoning (optional)
- 1/4 teaspoon red pepper flakes (optional, for spice)
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Cook the pasta – Bring a large pot of salted water to a boil and cook pasta according to package instructions. Reserve ½ cup pasta water, then drain and set aside.
- Make the garlic sauce – In a large skillet over medium heat, melt butter. Add minced garlic and sauté for 1 minute until fragrant.
- Add the cream & cheese – Pour in heavy cream and milk, then whisk in Parmesan cheese, salt, pepper, Italian seasoning, and red pepper flakes. Simmer for 3-4 minutes until slightly thickened.
- Combine with pasta – Add the drained pasta to the sauce, tossing to coat. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Serve & garnish – Sprinkle with fresh parsley and extra Parmesan. Enjoy warm!
