Description

Creamy Cucumber Salad is a refreshing side dish made with crisp cucumbers, red onions, and a tangy, creamy dressing. Perfect for barbecues, potlucks, or a light summer snack.


Ingredients

  • 1/2 small red onion, thinly sliced
  • 1/2 cup sour cream
  • 1 tbsp mayonnaise
  • 1 tbsp white vinegar or lemon juice
  • 1 tsp sugar
  • 1 tbsp chopped fresh dill (or 1 tsp dried dill)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine sliced cucumbers and red onion.
  2. In a separate bowl, whisk together sour cream, mayonnaise, vinegar, sugar, dill, salt, and pepper until smooth.
  3. Pour the dressing over the cucumbers and onions. Toss until well coated.
  4. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
  5. Stir gently before serving. Garnish with extra dill if desired.

Notes

  • Use English cucumbers for fewer seeds and less water content.
