- 1 lb potato gnocchi
- 2 cups cooked chicken, shredded
- 6 slices bacon, cooked and crumbled
- 1 tablespoon olive oil or butter
- 3 cloves garlic, minced
- 1 (8 oz) block cream cheese, cubed and softened
- 1 cup milk
- 1/2 cup chicken broth
- 1 packet ranch seasoning mix (about 1 oz)
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Chopped parsley or green onions for garnish (optional)
Instructions
- Cook gnocchi according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil or butter over medium heat. Add garlic and sauté for 1-2 minutes until fragrant.
- Add cream cheese, milk, and chicken broth to the skillet. Stir until the cream cheese is melted and the mixture is smooth.
- Stir in ranch seasoning mix, then add shredded chicken and crumbled bacon.
- Add cooked gnocchi and shredded cheddar cheese. Stir well to combine and heat through.
- Season with salt and pepper to taste.
- Garnish with chopped parsley or green onions before serving.
Notes
- Use store-bought rotisserie chicken for quicker prep.
- For a lighter version, substitute Greek yogurt for some of the cream cheese.
- Add sautéed spinach or broccoli for extra vegetables.
