Description

This Creamy Coconut Blackberry Mojito is a tropical twist on the classic mojito. Fresh blackberries and mint are muddled together, then mixed with creamy coconut milk, rum, and a splash of lime for a refreshing, fruity cocktail. It’s the perfect drink for summer gatherings, brunch, or poolside lounging!

Ingredients

Units Scale
  • 1/2 cup (75 g) fresh blackberries
  • 810 fresh mint leaves
  • 1 tablespoon sugar or honey (optional, adjust for sweetness)
  • Juice of 1 lime (plus extra wedges for garnish)
  • 2 oz (60 ml) white rum (or coconut rum for extra tropical flavor)
  • 2 oz (60 ml) coconut milk (full-fat for extra creaminess)
  • 1 oz (30 ml) club soda or sparkling water (for fizz)
  • Ice cubes

For Garnish:

  • Fresh mint sprigs
  • Extra blackberries
  • Lime wedges

Instructions

1. Muddle the blackberries and mint:

  • In a cocktail shaker or sturdy glass, muddle the blackberries, mint leaves, sugar (if using), and lime juice until the berries are broken down and the mint is fragrant.

2. Add the liquids:

  • Pour in the white rum and coconut milk.
  • Fill the shaker with ice and shake well until chilled and combined.

3. Assemble the cocktail:

  • Fill a glass with ice cubes and strain the mixture over the ice.
  • Top with club soda or sparkling water for a refreshing fizz.

4. Garnish and serve:

  • Garnish with extra blackberries, a lime wedge, and a sprig of mint.
  • Serve immediately and enjoy chilled!

Notes

  • Use coconut cream instead of coconut milk for a thicker, creamier version.
  • Replace rum with sparkling water for a refreshing non-alcoholic mocktail.
  • Add a pinch of shredded coconut on top for extra tropical vibes.
