For the Queso:
- 1/2 lb Mexican chorizo, casings removed
- 1 tablespoon butter or olive oil (if needed for sautéing)
- 1/2 onion, finely diced
- 1 jalapeño, finely chopped (optional, for extra heat)
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika (optional, for depth of flavor)
- 2 tablespoons flour (or cornstarch for a gluten-free version)
- 1 cup whole milk (or half-and-half for extra creaminess)
- 1 can (10 oz) Rotel tomatoes with green chilies, drained
- 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
- 1/2 cup cream cheese, softened
- 1/4 cup heavy cream (optional, for extra smooth texture)
For Garnish:
- Chopped cilantro
- Diced tomatoes
- Sliced jalapeños
- Crumbled queso fresco or extra shredded cheese
For Serving:
- Tortilla chips
- Warm flour or corn tortillas
- Vegetables (carrots, celery, bell peppers, etc.)
Instructions
Step 1: Cook the Chorizo
- Heat a large skillet over medium heat.
- Add chorizo and cook, breaking it apart, until browned and crispy (about 5 minutes).
- Remove chorizo with a slotted spoon, leaving some grease in the pan.
Step 2: Sauté the Aromatics
- In the same pan, sauté onion and jalapeño until soft (3 minutes).
- Add garlic, cumin, and smoked paprika, stirring for 30 seconds.
Step 3: Make the Queso Base
- Stir in flour and cook for 1 minute, until lightly golden.
- Slowly whisk in milk, stirring continuously to avoid lumps.
- Add Rotel tomatoes and bring to a gentle simmer.
Step 4: Melt the Cheese
- Reduce heat to low and stir in shredded cheese and cream cheese.
- Stir until completely melted and smooth.
- If too thick, add a little extra milk or heavy cream.
Step 5: Combine & Serve
- Stir in the cooked chorizo.
- Transfer to a serving dish or mini crockpot to keep warm.
- Garnish with cilantro, jalapeños, and diced tomatoes.
