For the Chicken:
- 2 large boneless, skinless chicken breasts (halved lengthwise)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 2 tablespoons olive oil
For the Sauce:
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup (240 ml) heavy cream
- 1/2 cup (120 ml) chicken broth
- 1/2 cup (50 g) grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 3 cups fresh spinach (about 90 g)
- 1 tablespoon lemon juice (optional, for brightness)
Instructions
1️⃣ Cook the Chicken:
- Season chicken with salt, pepper, garlic powder, and paprika.
- Heat olive oil in a large skillet over medium-high heat.
- Cook the chicken for 4-5 minutes per side, until golden brown and cooked through (internal temp: 165°F / 75°C).
- Transfer to a plate and set aside.
2️⃣ Make the Sauce:
- In the same skillet, melt butter over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Pour in chicken broth, scraping the pan to deglaze.
- Stir in heavy cream, Parmesan, Italian seasoning, and red pepper flakes (if using).
- Let simmer for 2-3 minutes until the sauce thickens.
3️⃣ Add Spinach & Finish:
- Stir in fresh spinach and cook until wilted (1-2 minutes).
- Add lemon juice (if using) and adjust seasoning if needed.
- Return the chicken to the skillet, spooning sauce over the top.
- Simmer for 1-2 minutes to reheat the chicken.
4️⃣ Serve & Enjoy:
- Serve hot over pasta, rice, mashed potatoes, or with crusty bread.
