Ingredients
-
8 oz pasta (penne, fettuccine, or your favorite)
-
1 tablespoon olive oil
-
1 lb boneless, skinless chicken breast, cut into bite-sized pieces
-
Salt and pepper, to taste
-
2 cloves garlic, minced
-
1 bunch asparagus, trimmed and cut into 2-inch pieces
-
1 cup heavy cream
-
1/2 cup chicken broth
-
1/2 cup grated Parmesan cheese
-
1 teaspoon lemon zest
-
1 tablespoon lemon juice
-
1/4 teaspoon red pepper flakes (optional)
-
Fresh parsley, chopped (for garnish)
Instructions
-
Cook pasta according to package instructions. Drain and set aside.
-
While pasta cooks, heat olive oil in a large skillet over medium-high heat.
-
Season chicken with salt and pepper. Add to skillet and cook for 5–7 minutes until golden and cooked through. Remove and set aside.
-
In the same pan, add garlic and asparagus. Sauté for 3–4 minutes until the asparagus is tender-crisp.
-
Pour in heavy cream and chicken broth. Stir to combine and bring to a gentle simmer.
-
Add Parmesan cheese, lemon zest, and lemon juice. Stir until the cheese is melted and the sauce thickens slightly.
-
Return chicken to the pan along with the cooked pasta. Toss everything together until coated and heated through.
-
Add red pepper flakes if using. Garnish with parsley and serve immediately.
Notes
-
Swap heavy cream with half-and-half or a mix of cream and milk for a lighter version.
-
Add mushrooms or peas for extra veggies.
-
You can use rotisserie chicken for a shortcut—just stir it in at the end.
