- 12 oz (340g) pasta (penne or fettuccine)
- 1 lb (450g) boneless chicken breast, cut into strips
- 2 tbsp olive oil
- 1 tbsp butter
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1/4 tsp red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Season chicken strips with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through. Remove and set aside.
- In the same skillet, melt butter and sauté onion and garlic until soft and fragrant.
- Add chicken broth and bring to a simmer, scraping up any brown bits from the pan.
- Stir in heavy cream and Parmesan cheese. Let simmer for 3-5 minutes until the sauce thickens.
- Return cooked chicken to the skillet and stir to coat in the sauce.
- Add cooked pasta to the skillet and toss everything together. Adjust seasoning if needed.
- Garnish with chopped parsley and serve warm.
Notes
- You can substitute half-and-half for a lighter sauce.
- Add spinach or mushrooms for extra flavor and nutrition.
- Use rotisserie chicken for a quicker version.
- Best served immediately, but leftovers keep well for 2-3 days in the fridge.
