Description

A comforting and delicious creamy chicken and pasta dish made with tender chicken, rich cream sauce, and your favorite pasta. Perfect for a quick and satisfying weeknight meal.


Ingredients

  • 12 oz (340g) pasta (penne or fettuccine)
  • 1 lb (450g) boneless chicken breast, cut into strips
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1/4 tsp red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Season chicken strips with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through. Remove and set aside.
  4. In the same skillet, melt butter and sauté onion and garlic until soft and fragrant.
  5. Add chicken broth and bring to a simmer, scraping up any brown bits from the pan.
  6. Stir in heavy cream and Parmesan cheese. Let simmer for 3-5 minutes until the sauce thickens.
  7. Return cooked chicken to the skillet and stir to coat in the sauce.
  8. Add cooked pasta to the skillet and toss everything together. Adjust seasoning if needed.
  9. Garnish with chopped parsley and serve warm.

Notes

  • You can substitute half-and-half for a lighter sauce.
  • Add spinach or mushrooms for extra flavor and nutrition.
  • Use rotisserie chicken for a quicker version.
  • Best served immediately, but leftovers keep well for 2-3 days in the fridge.
