  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Cajun seasoning (adjust to taste)
  • 1/4 tsp smoked paprika
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper (or to taste)
  • 1/2 cup reserved pasta water (optional, to adjust sauce consistency)
  • 2 tbsp fresh parsley or basil, chopped (for garnish)
  • Optional toppings: grilled chicken, shrimp, or sausage

Instructions

  1. Cook the pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. Prepare the sauce:
    • In a large skillet over medium heat, melt the butter. Add the garlic and sauté for 1–2 minutes until fragrant.
    • Stir in the pumpkin puree, heavy cream, Cajun seasoning, smoked paprika, salt, and pepper. Cook for 3–4 minutes, stirring frequently, until the sauce is smooth and heated through.
  3. Add the Parmesan cheese:
    • Stir in the Parmesan cheese until fully melted and incorporated. If the sauce is too thick, add a splash of reserved pasta water to achieve your desired consistency.
  4. Combine pasta and sauce:
    • Add the cooked pasta to the skillet and toss to coat evenly in the sauce. Adjust seasoning if needed.
  5. Serve:
    • Transfer to serving bowls and garnish with fresh parsley or basil. Add optional toppings like grilled chicken or shrimp for a heartier meal.
