  • 2 large chicken breasts, sliced into thin strips
  • 2 tbsp Cajun seasoning (divided)
  • 2 tbsp olive oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 8 oz fettuccine or penne pasta
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Extra Parmesan, for serving (optional)

Instructions

  • Cook the Chicken: Season the chicken strips with 1 tablespoon of Cajun seasoning. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 5-7 minutes until golden brown and cooked through. Remove from skillet and set aside.
  • Sauté Vegetables: In the same skillet, add the bell peppers and garlic. Cook for 2-3 minutes until the peppers are slightly softened.
  • Make the Sauce: Reduce the heat to medium. Add the heavy cream, chicken broth, and remaining Cajun seasoning. Stir until well combined and bring to a simmer.
  • Cook the Pasta: While the sauce is simmering, cook pasta according to package instructions. Drain and set aside.
  • Combine Everything: Add the cooked chicken, pasta, and Parmesan cheese to the skillet. Toss everything together, ensuring the pasta and chicken are coated in the creamy sauce. Season with salt and pepper to taste.
  • Serve: Garnish with fresh parsley and additional Parmesan, if desired. Serve warm.

  • Adjust the Cajun seasoning to your spice preference; add more for extra heat.
  • Substitute half-and-half for heavy cream if you prefer a lighter sauce.
