- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 3 cloves garlic, minced
- 8 oz pasta (penne, fettuccine, or your choice)
- 1 (5.2 oz) package Boursin cheese (Garlic & Fine Herbs)
- 1/2 cup heavy cream
- 1/2 cup reserved pasta water (as needed)
- 1/4 cup grated Parmesan cheese (optional)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Cook pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
- Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until golden and cooked through, about 6-7 minutes. Remove and set aside.
- In the same skillet, reduce heat to medium and add garlic. Cook for 1 minute until fragrant.
- Add Boursin cheese and heavy cream. Stir until the cheese melts and forms a creamy sauce.
- Return cooked chicken to the skillet, then add the cooked pasta. Toss to coat everything evenly.
- If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Stir in Parmesan cheese if using, and adjust seasoning with salt and pepper.
- Garnish with chopped parsley and serve immediately.

- Use rotisserie chicken for a quicker version.
- Try adding spinach or sun-dried tomatoes for extra flavor and color.
- Boursin comes in different flavors—try shallot & chive or pepper for variety.
