  • 8 oz (225g) bacon, diced
  • 3 large egg yolks
  • 1 large egg
  • 1 cup grated Parmesan cheese (plus extra for garnish)
  • 1/2 cup heavy cream (optional, for extra creaminess)
  • 2 garlic cloves, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (to taste)
  • 1/4 cup pasta water (reserved)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  • Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining.
  • Prepare the Bacon:
    • In a large skillet over medium heat, cook the diced bacon until crispy. Remove with a slotted spoon and set aside. Discard excess grease, leaving about 1 tablespoon in the skillet.
  • Make the Sauce:
    • In a bowl, whisk together the egg yolks, whole egg, Parmesan cheese, and heavy cream (if using). Add the black pepper and a pinch of salt.
  • Combine Everything:
    • Add the minced garlic to the skillet with the reserved bacon grease and sauté for about 1 minute, until fragrant.
    • Add the cooked pasta to the skillet and toss to coat. Reduce the heat to low.
    • Gradually pour the egg mixture over the pasta, tossing continuously to prevent scrambling. Add the reserved pasta water a little at a time to create a smooth, creamy sauce.
  • Add Bacon and Finish:
    • Stir the crispy bacon back into the pasta. Toss everything together until evenly coated and heated through.
  • Serve and Garnish:
    • Divide the carbonara into bowls. Garnish with additional Parmesan cheese, freshly chopped parsley, and a crack of black pepper if desired. Serve immediately.
