Ingredients
Units
Scale
- 12 oz (340g) spaghetti or fettuccine
- 8 oz (225g) bacon, diced
- 3 large egg yolks
- 1 large egg
- 1 cup grated Parmesan cheese (plus extra for garnish)
- 1/2 cup heavy cream (optional, for extra creaminess)
- 2 garlic cloves, minced
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt (to taste)
- 1/4 cup pasta water (reserved)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining.
- Prepare the Bacon:
- In a large skillet over medium heat, cook the diced bacon until crispy. Remove with a slotted spoon and set aside. Discard excess grease, leaving about 1 tablespoon in the skillet.
- Make the Sauce:
- In a bowl, whisk together the egg yolks, whole egg, Parmesan cheese, and heavy cream (if using). Add the black pepper and a pinch of salt.
- Combine Everything:
- Add the minced garlic to the skillet with the reserved bacon grease and sauté for about 1 minute, until fragrant.
- Add the cooked pasta to the skillet and toss to coat. Reduce the heat to low.
- Gradually pour the egg mixture over the pasta, tossing continuously to prevent scrambling. Add the reserved pasta water a little at a time to create a smooth, creamy sauce.
- Add Bacon and Finish:
- Stir the crispy bacon back into the pasta. Toss everything together until evenly coated and heated through.
- Serve and Garnish:
- Divide the carbonara into bowls. Garnish with additional Parmesan cheese, freshly chopped parsley, and a crack of black pepper if desired. Serve immediately.
Notes
- For an authentic carbonara, skip the heavy cream and rely solely on the egg mixture for creaminess.
- Pancetta or guanciale can be used instead of bacon for a more traditional flavor.
- Serve with a side of garlic bread or a crisp green salad for a complete meal.
