- 4 boneless, skinless chicken breasts
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup (30 g) all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1/2 cup (120 ml) chicken broth
- 1 cup (240 ml) heavy cream
- 1/2 cup (50 g) grated Asiago cheese
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil (optional)
- 1/4 teaspoon crushed red pepper flakes (optional, for a hint of spice)
- Fresh parsley or basil, chopped (for garnish)
Instructions
- Prepare the chicken:
- Season the chicken breasts with salt and pepper on both sides. Lightly coat them in flour, shaking off any excess.
- Cook the chicken:
- Heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken and cook for 4–5 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken from the skillet and set aside.
- Make the sauce:
- In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for 30 seconds, or until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
- Stir in the heavy cream, Asiago cheese, thyme, basil, and red pepper flakes (if using). Simmer for 3–4 minutes, stirring frequently, until the sauce thickens slightly.
- Combine chicken and sauce:
- Return the chicken to the skillet, spooning the sauce over the top. Simmer for 2–3 minutes to warm the chicken and meld the flavors.
- Serve:
- Garnish with fresh parsley or basil and serve hot over pasta, rice, or alongside steamed vegetables.
Notes
- Substitute Parmesan or Romano cheese for Asiago if preferred.
- For a lower-calorie version, use half-and-half instead of heavy cream.
- Add sautéed mushrooms or spinach to the sauce for extra flavor and texture.
