Description

This Creamy & Savory Beer Cheese Dip is rich, cheesy, and packed with bold beer flavor. Made with cheddar cheese, cream cheese, and spices, it’s the perfect dip for pretzels, bread, chips, or veggies. Great for game day, parties, or a cozy night in!

For the Beer Cheese Dip:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup beer (lager, pale ale, or your favorite beer – avoid super bitter IPAs)
  • 1/2 cup whole milk (for extra creaminess)
  • 1 teaspoon Dijon mustard (adds depth of flavor)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (or regular paprika)
  • 1/4 teaspoon cayenne pepper (optional, for a spicy kick)
  • 4 oz (1/2 cup) cream cheese (softened)
  • 2 cups sharp cheddar cheese (freshly shredded for best meltability)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper

For Garnish & Serving:

  • Chopped chives or green onions (optional)
  • Crumbled crispy bacon (optional but delicious!)
  • Soft pretzels, crackers, tortilla chips, or veggies for dipping



Instructions

1. Make the Roux (Thickening Base)

  1. In a saucepan over medium heat, melt butter and whisk in flour.
  2. Cook for 1 minute, stirring constantly until it forms a smooth paste.

2. Add the Beer & Seasonings

  1. Slowly whisk in the beer and milk, stirring to prevent lumps.
  2. Add Dijon mustard, garlic powder, smoked paprika, cayenne, salt, and black pepper.
  3. Let simmer for 2-3 minutes, until slightly thickened.

3. Melt the Cheeses

  1. Reduce heat to low, then stir in cream cheese until smooth.
  2. Gradually add shredded cheddar, stirring constantly until fully melted and creamy.

4. Serve & Enjoy!

  1. Transfer to a serving bowl or mini slow cooker to keep warm.
  2. Garnish with chopped chives, green onions, or crispy bacon.
  3. Serve warm with soft pretzels, bread, chips, or veggies!



Notes

  • Too thick? Stir in extra milk or beer to thin it out.
  • Want it spicier? Add more cayenne or hot sauce!
  • Best cheeses to use: Sharp cheddar, Monterey Jack, or Gouda for smooth melting.
