Creamed Chipped Beef on Toast, also known as “SOS,” is a creamy white sauce loaded with slices of dried beef and served over toasted bread. It’s rich, savory, and super simple — a beloved diner-style dish that’s stood the test of time.
Ingredients

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk (warm)

4 oz dried beef, chopped or torn into small pieces

Black pepper, to taste

Pinch of cayenne or paprika (optional)

4 slices of white or sourdough bread, toasted

Fresh parsley, for garnish (optional)
Instructions

Prep the beef (optional):
If your dried beef is very salty, rinse it under cold water and pat dry before chopping. This helps cut the saltiness. -
Make the roux:
In a medium saucepan, melt butter over medium heat. Whisk in the flour and cook for 1–2 minutes until bubbly and golden (this removes the raw flour taste). -
Add the milk:
Slowly pour in the warm milk while whisking constantly to avoid lumps. Cook for 4–5 minutes until the sauce thickens and is smooth. -
Add the beef:
Stir in the chopped dried beef and simmer for another 2–3 minutes. Add black pepper and cayenne or paprika if using. -
Serve:
Spoon the creamed beef over hot, buttered toast. Garnish with parsley if desired and serve immediately.
