Ingredients

Scale

4 cups cooked, shredded chicken (about 2 large chicken breasts or rotisserie chicken) 1 (10.5 oz) can cream of chicken soup 1 cup sour cream 1 (1 oz) packet ranch seasoning mix 1 1/2 cups shredded cheddar cheese, divided 1/2 cup cooked, crumbled bacon (plus extra for garnish, optional) 1 (32 oz) bag frozen tater tots

Instructions

Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish. Mix the filling: In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, ranch seasoning, 1 cup of shredded cheddar cheese, and half of the crumbled bacon. Mix until evenly combined. Assemble the casserole: Spread the chicken mixture evenly into the prepared baking dish. Top with a single layer of frozen tater tots, arranging them evenly. Add cheese and bacon: Sprinkle the remaining 1/2 cup of cheddar cheese over the tater tots, followed by the rest of the crumbled bacon. Bake: Place the casserole in the oven and bake for 35-40 minutes, or until the tater tots are golden brown and crispy, and the filling is bubbly. Garnish and serve: Let the casserole cool for 5 minutes before serving. Garnish with additional bacon and chopped parsley or green onions, if desired.

Notes

For added flavor, mix 1/4 cup of chopped green onions or chives into the chicken mixture. Use turkey bacon or omit the bacon for a lighter version. Substitute cream of chicken soup with cream of mushroom or cream of celery if preferred.
