Description

This Crack Corn Casserole is a creamy, cheesy, and slightly sweet side dish that will have everyone coming back for seconds! Loaded with corn, cream cheese, and crispy bacon, this casserole is perfect for holidays, potlucks, or an easy family dinner. It’s called “crack” because it’s so addictive!


Ingredients

  • 500 g (4 cups) frozen corn (or 2 cans (400 g) whole kernel corn, drained)
  • 1 can (400 g) creamed corn
  • 225 g (8 oz) cream cheese, softened
  • 200 g (1 cup) sour cream
  • 100 g (1 cup) shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 1 small onion, finely chopped
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 100 g (1 cup) crushed Ritz crackers or butter crackers
  • 2 tablespoons chopped green onions or parsley (for garnish)

Instructions

🍲 Preparing the Casserole:

  1. Preheat the Oven:

    • Preheat your oven to 180°C (350°F).
    • Grease a 9×13 inch (or similar) baking dish with non-stick spray.
  2. Sauté the Onions:

    • In a skillet, melt the butter over medium heat.
    • Add the chopped onion and sauté until softened (3-4 minutes).
  3. Mix the Casserole Ingredients:

    • In a large bowl, combine the corn, creamed corn, sautéed onions, cream cheese, sour cream, shredded cheddar, crumbled bacon, garlic powder, onion powder, smoked paprika, salt, and pepper.
    • Mix until everything is well incorporated.
  4. Transfer to the Baking Dish:

    • Pour the mixture into the prepared baking dish and spread evenly.

🔥 Add the Topping and Bake:

  1. Prepare the Topping:

    • Sprinkle the crushed Ritz crackers evenly over the top of the casserole.
  2. Bake:

    • Bake for 30-35 minutes until the casserole is bubbly and the top is golden brown.
  3. Garnish:

    • Remove from the oven and sprinkle with chopped green onions or parsley for a pop of color.
