This Cozy Kielbasa Soup is hearty, warming, and packed with smoky sausage, tender potatoes, and a creamy, flavorful broth. Perfect for chilly days, this one-pot wonder will quickly become a family favorite!

Ingredients

  • 1 tbsp olive oil
  • 1 lb kielbasa sausage, sliced into rounds
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 3 cups chicken broth
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 1 cup frozen or fresh corn kernels
  • 2 cups chopped kale or spinach (optional)
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste

Instructions

1. Sauté the Kielbasa and Vegetables:

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add the sliced kielbasa and cook until browned, about 4-5 minutes. Remove and set aside.
  3. In the same pot, sauté the diced onion until softened, about 3 minutes. Add the minced garlic and cook for another minute.

2. Cook the Potatoes:

  1. Add the diced potatoes, smoked paprika, thyme, and chicken broth to the pot.
  2. Bring to a boil, then reduce the heat to low and simmer for 10-12 minutes, or until the potatoes are tender.

3. Finish the Soup:

  1. Stir in the corn, heavy cream, and cooked kielbasa. Let simmer for 5 minutes to heat through.
  2. If using, add the chopped kale or spinach and cook until wilted, about 2-3 minutes.
  3. Season with salt and pepper to taste.

4. Serve:

  1. Ladle the soup into bowls and serve warm with crusty bread or crackers on the side.
