- 1 tbsp olive oil
- 1 lb kielbasa sausage, sliced into rounds
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 medium potatoes, peeled and diced
- 3 cups chicken broth
- 1 cup heavy cream (or half-and-half for a lighter option)
- 1 cup frozen or fresh corn kernels
- 2 cups chopped kale or spinach (optional)
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- Salt and pepper, to taste
Instructions
1. Sauté the Kielbasa and Vegetables:
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add the sliced kielbasa and cook until browned, about 4-5 minutes. Remove and set aside.
- In the same pot, sauté the diced onion until softened, about 3 minutes. Add the minced garlic and cook for another minute.
2. Cook the Potatoes:
- Add the diced potatoes, smoked paprika, thyme, and chicken broth to the pot.
- Bring to a boil, then reduce the heat to low and simmer for 10-12 minutes, or until the potatoes are tender.
3. Finish the Soup:
- Stir in the corn, heavy cream, and cooked kielbasa. Let simmer for 5 minutes to heat through.
- If using, add the chopped kale or spinach and cook until wilted, about 2-3 minutes.
- Season with salt and pepper to taste.
4. Serve:
- Ladle the soup into bowls and serve warm with crusty bread or crackers on the side.
