- 1 pound ground beef
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 (10 oz) can diced tomatoes with green chilies
- 1 (15 oz) can corn, drained
- 1 (15 oz) can black beans, drained and rinsed
- 2 cups cooked rice
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1/2 cup additional shredded cheese for topping
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook ground beef, onion, and bell pepper until meat is browned and vegetables are softened. Drain excess grease.
- Add garlic and cook for 1 minute.
- Stir in diced tomatoes with chilies, corn, black beans, cooked rice, 1 cup shredded cheese, sour cream, chili powder, cumin, salt, and pepper. Mix until well combined.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Top with remaining 1/2 cup shredded cheese.
- Bake for 20–25 minutes, or until heated through and cheese is melted and bubbly.
- Let rest for 5 minutes before serving. Garnish with chopped cilantro or green onions if desired.

- Use ground turkey or chicken as a lighter alternative to beef.
