Description

This hearty and comforting Cowboy Meatloaf and Potato Casserole brings together classic meatloaf, creamy mashed potatoes, crispy fried onions, and gooey cheese in one deliciously satisfying dish. It’s perfect for a family dinner or potluck and guaranteed to be a crowd-pleaser.


Ingredients

For the Meatloaf Layer:

  • 1 1/2 pounds lean ground beef

  • 1 cup finely chopped onion

  • 1/2 cup plain bread crumbs

  • 1/2 cup barbecue sauce (plus more for topping)

  • 1 large egg

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

For the Potato Topping:

  • 3 cups mashed potatoes (prepared ahead or instant)

  • 1 cup shredded cheddar cheese

  • 1 cup crispy fried onions (like French’s)


Instructions

  1. Preheat your oven to 375°F (190°C).

  2. In a large bowl, mix together ground beef, onion, bread crumbs, ½ cup barbecue sauce, egg, garlic powder, onion powder, salt, and pepper until fully combined.

  3. Press the meat mixture evenly into the bottom of a 9×9-inch baking dish.

  4. Spread an additional layer of barbecue sauce over the top of the meat mixture, if desired.

  5. Bake in the preheated oven for 25 minutes.

  6. Carefully remove from oven and spread mashed potatoes over the meatloaf layer.

  7. Sprinkle the shredded cheese evenly over the mashed potatoes.

  8. Return to oven and bake for another 15 minutes, until cheese is melted and bubbly.

  9. Top with crispy fried onions and bake for an additional 5 minutes.

  10. Let rest for 5–10 minutes before serving.
