- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) black-eyed peas, drained and rinsed
- 1.5 cups corn kernels (fresh, canned, or frozen and thawed)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 jalapeño, seeded and finely chopped
- 1/2 red onion, finely chopped
- 1 cup cherry tomatoes, quartered
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- Salt and black pepper to taste
Instructions
- In a large mixing bowl, combine black beans, black-eyed peas, corn, bell peppers, jalapeño, red onion, cherry tomatoes, and cilantro.
- In a small bowl, whisk together olive oil, red wine vinegar, lime juice, garlic powder, cumin, salt, and pepper.
- Pour the dressing over the bean and vegetable mixture.
- Toss everything gently to combine and coat evenly.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve chilled or at room temperature with tortilla chips or as a side dish.
Notes
- For extra heat, leave the seeds in the jalapeño or add a pinch of cayenne pepper.
- This dish can be made a day ahead for even better flavor.
- Great as a topping for grilled chicken or fish.
