Description

Cowboy Caviar is a vibrant, flavorful dip or salad made with black beans, corn, and fresh vegetables, tossed in a zesty vinaigrette. Perfect as a party appetizer or a healthy side dish.


Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) black-eyed peas, drained and rinsed
  • 1.5 cups corn kernels (fresh, canned, or frozen and thawed)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeño, seeded and finely chopped
  • 1/2 red onion, finely chopped
  • 1 cup cherry tomatoes, quartered
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste

Instructions

  1. In a large mixing bowl, combine black beans, black-eyed peas, corn, bell peppers, jalapeño, red onion, cherry tomatoes, and cilantro.
  2. In a small bowl, whisk together olive oil, red wine vinegar, lime juice, garlic powder, cumin, salt, and pepper.
  3. Pour the dressing over the bean and vegetable mixture.
  4. Toss everything gently to combine and coat evenly.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Serve chilled or at room temperature with tortilla chips or as a side dish.

Notes

  • For extra heat, leave the seeds in the jalapeño or add a pinch of cayenne pepper.
  • This dish can be made a day ahead for even better flavor.
  • Great as a topping for grilled chicken or fish.
