This Couscous with Pine Nuts and Parsley is a light, fluffy side dish tossed with toasted pine nuts, fresh herbs, and a hint of lemon — perfect alongside chicken, fish, or vegetables.

- 1 cup couscous
- 1 1/4 cups chicken or vegetable broth
- 2 tablespoons unsalted butter or olive oil
- 1/4 cup pine nuts
- 1/4 cup chopped fresh parsley
- 1 tablespoon fresh lemon juice
- Salt and black pepper, to taste
Instructions
- In a small skillet over medium heat, toast the pine nuts for 2–3 minutes, stirring frequently, until golden and fragrant. Set aside.
- In a medium saucepan, bring the broth and butter (or olive oil) to a boil.
- Stir in the couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
- Stir in toasted pine nuts, chopped parsley, and lemon juice. Season with salt and pepper to taste.
- Serve warm or at room temperature.
Notes
- For extra flavor, add finely chopped green onions or mint.
- Try using vegetable broth to keep it vegetarian.
- To make ahead, fluff with a fork before serving to keep it light and airy.
