Description

This Couscous with Pine Nuts and Parsley is a light, fluffy side dish tossed with toasted pine nuts, fresh herbs, and a hint of lemon — perfect alongside chicken, fish, or vegetables.


Ingredients

  • 1 cup couscous
  • 1 1/4 cups chicken or vegetable broth
  • 2 tablespoons unsalted butter or olive oil
  • 1/4 cup pine nuts
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper, to taste

Instructions

  1. In a small skillet over medium heat, toast the pine nuts for 2–3 minutes, stirring frequently, until golden and fragrant. Set aside.
  2. In a medium saucepan, bring the broth and butter (or olive oil) to a boil.
  3. Stir in the couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
  4. Stir in toasted pine nuts, chopped parsley, and lemon juice. Season with salt and pepper to taste.
  5. Serve warm or at room temperature.

Notes

  • For extra flavor, add finely chopped green onions or mint.
