Ingredients

Units Scale

Serves 8-10:

  • For the bread batter:

    • 1/2 cup (115 g) unsalted butter, softened
    • 2/3 cup (135 g) granulated sugar
    • 2 large eggs
    • 1 1/2 teaspoons vanilla extract
    • 1 1/2 cups (190 g) all-purpose flour
    • 1 3/4 teaspoons baking powder
    • 1/3 cup (80 ml) milk
  • For the apple layer:

    • 2 medium apples (Granny Smith or Honeycrisp), peeled and diced
    • 2 tablespoons granulated sugar
    • 1 teaspoon ground cinnamon
  • For the cinnamon-sugar swirl:

    • 1/3 cup (65 g) granulated sugar
    • 1 teaspoon ground cinnamon
  • For the glaze:

    • 1/2 cup (60 g) powdered sugar
    • 23 tablespoons milk or heavy cream
    • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the oven and pan:

    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Make the batter:

    • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
    • Beat in the eggs one at a time, followed by the vanilla extract.
    • In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until just combined.
  3. Prepare the apple layer:

    • In a small bowl, toss the diced apples with sugar and cinnamon.
  4. Prepare the cinnamon-sugar swirl:

    • In another small bowl, mix the sugar and cinnamon for the swirl.
  5. Assemble the bread:

    • Pour half the batter into the prepared loaf pan, spreading it evenly.
    • Sprinkle half of the cinnamon-sugar swirl mixture over the batter, followed by half of the apple mixture.
    • Add the remaining batter on top, then sprinkle with the remaining cinnamon-sugar mixture and apple mixture. Gently press the apples into the batter.
  6. Bake the bread:

    • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Make the glaze:

    • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the cooled bread.
  8. Serve:

    • Slice and enjoy this delicious apple fritter bread with coffee or tea!

Notes

  • For a nuttier flavor, add 1/2 cup of chopped pecans or walnuts to the apple layer.
