Description

  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar (or coconut sugar for a healthier option)
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional, for warmth)
  • 1/2 cup chocolate chips, raisins, or chopped nuts (optional)

Instructions

1. Preheat & Prep

  1. Preheat oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.

2. Make the Dough

  1. In a bowl, beat butter and sugar until light and fluffy.
  2. Mix in cottage cheese, egg, and vanilla extract until smooth. (For a finer texture, blend the cottage cheese before adding.)
  3. In a separate bowl, whisk flour, baking powder, salt, and cinnamon.
  4. Gradually add dry ingredients to the wet mixture, stirring until combined.
  5. Fold in chocolate chips, nuts, or raisins (if using).

3. Shape & Bake

  1. Scoop tablespoon-sized portions onto the baking sheet.
  2. Flatten slightly with a spoon or fork.
  3. Bake for 12-15 minutes, or until edges are golden brown.
