- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar (or coconut sugar for a healthier option)
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon (optional, for warmth)
- 1/2 cup chocolate chips, raisins, or chopped nuts (optional)
Instructions
1. Preheat & Prep
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
2. Make the Dough
- In a bowl, beat butter and sugar until light and fluffy.
- Mix in cottage cheese, egg, and vanilla extract until smooth. (For a finer texture, blend the cottage cheese before adding.)
- In a separate bowl, whisk flour, baking powder, salt, and cinnamon.
- Gradually add dry ingredients to the wet mixture, stirring until combined.
- Fold in chocolate chips, nuts, or raisins (if using).
3. Shape & Bake
- Scoop tablespoon-sized portions onto the baking sheet.
- Flatten slightly with a spoon or fork.
- Bake for 12-15 minutes, or until edges are golden brown.
- Let cool for 5 minutes before transferring to a wire rack.
4. Serve & Enjoy
