For the Cookies:
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
For the Ganache Topping:
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
Topping:
- 1/4 cup rainbow candy-coated chocolate sprinkles (like mini M&Ms or rainbow chips)
Instructions
- Preheat the oven:
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Make the cookie dough:
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until combined.
- Sift in the cocoa powder, flour, baking soda, and salt. Mix until a soft dough forms.
- Shape and bake:
- Scoop 1 1/2-tablespoon portions of dough (or use a medium cookie scoop) and roll into balls. Place them on the prepared baking sheets, spacing about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are set. The centers may look slightly underdone—this is okay.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
- Make the ganache:
- In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 20-second intervals, stirring between each, until smooth and glossy.
- Assemble the cookies:
- Spoon or spread a small amount of ganache onto the top of each cookie. While the ganache is still wet, sprinkle with rainbow candy-coated sprinkles.
- Set and serve:
- Allow the ganache to set at room temperature for 15-20 minutes, or chill in the refrigerator for 10 minutes. Serve and enjoy!
Notes
- For extra fudginess, add 1/4 cup mini chocolate chips to the dough.
- Store cookies in an airtight container at room temperature for up to 3 days.
