Description
Corn Ribs are a fun and flavorful way to enjoy corn on the cob. Cut into strips and seasoned with spices, then roasted or grilled until crispy and slightly charred — they curl up like ribs and make a perfect summer snack or side dish.

- 4 ears fresh corn, husked
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Optional: fresh lime wedges, chopped cilantro, or grated Parmesan for garnish
Instructions
- Preheat oven to 425°F (220°C) or heat grill to medium-high.
- Carefully cut each ear of corn lengthwise into quarters (you should get 4 ribs per ear). Use a sharp knife and cut through the cob with firm pressure.
- In a small bowl, mix olive oil with smoked paprika, garlic powder, chili powder, salt, and pepper.
- Brush the corn ribs all over with the spiced oil mixture.
- Place corn ribs on a baking sheet lined with parchment paper or directly on the grill grates.
- Roast or grill for 15–20 minutes, flipping halfway through, until curled, golden, and lightly charred.
- Garnish with lime, cilantro, or Parmesan if desired. Serve immediately.
Notes
- Use a very sharp chef’s knife for safe and easy cutting of the corn.
- Serve with a dipping sauce like chipotle mayo or garlic aioli for extra flavor.
- Corn ribs are best enjoyed hot and fresh from the oven or grill.
