Description

These golden, crispy corn nuggets are a sweet and savory treat made with creamy corn batter, deep-fried to perfection. Perfect for appetizers, snacking, or as a fun side dish!

Ingredients

Units Scale

For the Batter:

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp granulated sugar
  • 1/2 cup milk
  • 1 large egg
  • 2 cups corn kernels (fresh, canned, or thawed frozen)

For Frying:

  • Vegetable oil (for frying)

Instructions

Prepare the Batter:

  1. Mix Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, salt, pepper, and sugar.
  2. Combine Wet Ingredients:
    • In a separate bowl, whisk the milk and egg together. Gradually add the wet ingredients to the dry ingredients, stirring until smooth.
  3. Add Corn:
    • Fold the corn kernels into the batter until evenly combined. For extra creaminess, mash a small portion of the corn before mixing it in.

Fry the Nuggets:

  1. Heat the Oil:
    • In a deep skillet or fryer, heat the oil to 350°F (175°C). Ensure there’s enough oil to submerge the nuggets.
  2. Drop the Batter:
    • Using a spoon or small ice cream scoop, drop spoonfuls of batter into the hot oil. Fry in batches to avoid overcrowding the pan.
  3. Fry Until Golden:
    • Cook the nuggets for 3-4 minutes, turning occasionally, until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve:

  1. Enjoy Hot:
    • Serve immediately with your favorite dipping sauces, such as ranch dressing, honey mustard, or ketchup.

Notes

  • For a sweeter variation, add 2 more tablespoons of sugar and serve with maple syrup or powdered sugar.
  • These nuggets can be made ahead and reheated in an oven at 375°F (190°C) for 5-7 minutes.
  • You can add diced jalapeños or shredded cheese to the batter for extra flavor.
