These Brownie Mix Cookies are soft, chewy, and chocolatey with a crackly top, just like the best brownies. Made with just a few ingredients, they’re the perfect quick dessert for any occasion.

  • 1 (18 oz) box brownie mix (any brand)
  • 1/4 cup all-purpose flour
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1/2 cup chocolate chips (optional, for extra chocolate flavor)

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Prepare the Dough: In a large mixing bowl, combine the brownie mix, flour, vegetable oil, and eggs. Mix until fully combined. If desired, fold in the chocolate chips.
  • Portion the Cookies: Use a cookie scoop or tablespoon to drop rounded spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake: Bake for 10-12 minutes, or until the tops are slightly cracked and set. Avoid overbaking for the best chewy texture.
  • Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
