Description
Colcannon Potatoes is a traditional Irish dish made with creamy mashed potatoes, sautéed cabbage or kale, and green onions — hearty, comforting, and perfect for St. Patrick’s Day or any cozy meal.

- 2 pounds potatoes, peeled and cubed
- 4 tablespoons unsalted butter, divided
- 1/2 head green cabbage, thinly sliced (or 3 cups chopped kale)
- 4 green onions, sliced
- 1/2 cup whole milk (more as needed)
- Salt and pepper, to taste
Instructions
- Place potatoes in a large pot and cover with cold water. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15–20 minutes. Drain well.
- While potatoes cook, melt 2 tablespoons butter in a large skillet over medium heat. Add cabbage (or kale) and green onions; sauté until softened, about 5–7 minutes.
- Mash the drained potatoes with remaining butter and warm milk until smooth and creamy. Add more milk as needed.
- Fold in the sautéed cabbage mixture and season with salt and pepper to taste.
- Serve hot with a pat of butter on top if desired.
Notes
- For extra flavor, cook cabbage in bacon fat and top with crispy bacon bits.
- Use kale instead of cabbage for a deeper green color and earthy flavor.
- Leftovers make great potato cakes — simply pan-fry spoonfuls in butter.
