Description

Coconut turkey curry is a flavorful and creamy dish made with tender turkey pieces simmered in a fragrant coconut milk-based sauce with warm Indian spices.


Ingredients

  • 1 tbsp oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch piece ginger, grated
  • 1 tbsp curry powder
  • 1/2 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/4 tsp chili powder (optional)
  • 2 cups cooked turkey, chopped
  • 1 can (14 oz) coconut milk
  • 1/2 cup diced tomatoes (canned or fresh)
  • Salt and pepper to taste
  • Juice of 1/2 lime
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan, for serving

Instructions

  1. Heat oil in a large skillet over medium heat. Add onion and cook until soft and golden, about 5 minutes.
  2. Stir in garlic and ginger, cooking for 1–2 minutes until fragrant.
  3. Add curry powder, cumin, turmeric, and chili powder (if using), and stir for 1 minute.
  4. Add chopped turkey and cook, stirring to coat in the spices.
  5. Pour in the coconut milk and diced tomatoes. Stir well and bring to a gentle simmer.
  6. Reduce heat and simmer uncovered for 10–15 minutes until slightly thickened.
  7. Season with salt, pepper, and lime juice to taste.
  8. Garnish with fresh cilantro and serve with rice or naan.

Notes

  • Great way to use up leftover holiday turkey.
  • Substitute chicken or tofu for turkey if desired.
  • Adjust spice level to taste by varying chili powder.
