Description
Coconut turkey curry is a flavorful and creamy dish made with tender turkey pieces simmered in a fragrant coconut milk-based sauce with warm Indian spices.

- 1 tbsp oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch piece ginger, grated
- 1 tbsp curry powder
- 1/2 tsp ground cumin
- 1/2 tsp turmeric
- 1/4 tsp chili powder (optional)
- 2 cups cooked turkey, chopped
- 1 can (14 oz) coconut milk
- 1/2 cup diced tomatoes (canned or fresh)
- Salt and pepper to taste
- Juice of 1/2 lime
- Fresh cilantro, chopped (for garnish)
- Cooked rice or naan, for serving
Instructions
- Heat oil in a large skillet over medium heat. Add onion and cook until soft and golden, about 5 minutes.
- Stir in garlic and ginger, cooking for 1–2 minutes until fragrant.
- Add curry powder, cumin, turmeric, and chili powder (if using), and stir for 1 minute.
- Add chopped turkey and cook, stirring to coat in the spices.
- Pour in the coconut milk and diced tomatoes. Stir well and bring to a gentle simmer.
- Reduce heat and simmer uncovered for 10–15 minutes until slightly thickened.
- Season with salt, pepper, and lime juice to taste.
- Garnish with fresh cilantro and serve with rice or naan.
Notes
- Great way to use up leftover holiday turkey.
- Substitute chicken or tofu for turkey if desired.
- Adjust spice level to taste by varying chili powder.
