- 1 tablespoon olive oil
- Salt and pepper to taste
- 3 tablespoons butter, divided
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 tablespoon red curry paste
- 1 can (13.5 oz) coconut milk
- 1 tablespoon lime juice
- 1 teaspoon fish sauce (optional)
- 2 tablespoons chopped fresh cilantro (for garnish)
- Cooked rice or vegetables, for serving
Instructions
- Season salmon fillets with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear salmon, skin-side down first, for 3–4 minutes per side or until golden and cooked through. Remove and set aside.
- In the same skillet, reduce heat to medium and add 1 tablespoon of butter. Sauté garlic and ginger for about 1 minute until fragrant.
- Stir in red curry paste and cook for another 30 seconds.
- Add coconut milk, lime juice, and fish sauce (if using). Stir and simmer for 5 minutes.
- Return salmon to the skillet and spoon sauce over the fillets. Simmer for 2–3 minutes more.
- In a small pan, melt remaining 2 tablespoons of butter and lightly brown the garlic (optional for enhanced flavor). Drizzle over salmon before serving.
- Garnish with chopped cilantro and serve with rice or vegetables.
