For the Meatloaf
2 lbs (900 g) ground beef (80% lean)
1 medium onion, finely chopped
2 garlic cloves, minced
1 cup breadcrumbs (plain or seasoned)
1/3 cup milk
2 large eggs, beaten
1 tbsp Worcestershire sauce
1 tsp dried parsley
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
For the Glaze
1/2 cup ketchup
2 tbsp brown sugar
1 tbsp Dijon mustard
1 tsp Worcestershire sauce
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper or aluminum foil for easier cleanup.
2. Make the Meatloaf Mixture
In a large mixing bowl, combine the breadcrumbs and milk. Let sit for 2–3 minutes to allow the breadcrumbs to absorb the milk.
Add the ground beef, onion, garlic, eggs, Worcestershire sauce, parsley, thyme, salt, and pepper. Mix gently with your hands until just combined. Avoid overmixing to keep the meatloaf tender.
3. Shape the Meatloaf
Transfer the mixture to the prepared baking sheet or loaf pan. Shape it into a loaf approximately 8 inches long and 4 inches wide.
4. Prepare the Glaze
In a small bowl, whisk together the ketchup, brown sugar, Dijon mustard, and Worcestershire sauce.
5. Apply the Glaze
Spread half of the glaze evenly over the top and sides of the meatloaf. Reserve the remaining glaze for later.
6. Bake the Meatloaf
Bake the meatloaf in the preheated oven for 45 minutes.
Remove from the oven and spread the remaining glaze on top.
Return the meatloaf to the oven and bake for an additional 15–20 minutes, or until the internal temperature reaches 160°F (70°C).
7. Rest and Serve
Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps the juices redistribute, keeping the meatloaf moist.
Slice and serve with mashed potatoes, green beans, or a side salad.

Customization: Add 1/2 cup of shredded cheese or chopped vegetables like bell peppers or carrots to the mixture for added flavor and texture.
