Ingredients
For the Salad:

6 cups mixed lettuce (romaine, iceberg, and leaf lettuce)

1 cup cherry tomatoes, halved

1 cucumber, sliced

1/4 red onion, thinly sliced

1/2 cup shredded carrots

1/4 cup shredded cheddar or mozzarella cheese

1/4 cup croutons (optional)
For the Dressing (Simple Red Wine Vinaigrette):

3 tablespoons olive oil

1 tablespoon red wine vinegar

1 teaspoon Dijon mustard

1/2 teaspoon Italian seasoning

Salt and black pepper to taste
Instructions

In a small bowl or jar, whisk together the vinaigrette ingredients until well blended.
