- 6 oz (170g) semi-sweet or dark chocolate, chopped
- 3 tablespoons unsalted butter
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream, cold
- Pinch of salt
- Optional: shaved chocolate or whipped cream, for serving
Instructions
- In a heatproof bowl over a pot of simmering water, melt the chopped chocolate and butter, stirring until smooth. Remove from heat and let cool slightly.
- In a separate bowl, whisk egg yolks with 2 tablespoons sugar until thick and pale. Stir the yolk mixture into the cooled chocolate along with vanilla.
- In a clean bowl, beat egg whites with a pinch of salt until soft peaks form. Gradually add remaining 2 tablespoons sugar and beat until stiff peaks form.
- In another bowl, whip the cold heavy cream until stiff peaks form.
- Gently fold the whipped cream into the chocolate mixture, then carefully fold in the beaten egg whites until fully incorporated and light.
- Spoon mousse into individual serving glasses or bowls. Chill for at least 2 hours, or until set.
- Serve topped with extra whipped cream and shaved chocolate if desired.

- Ensure the chocolate is cooled before adding yolks to avoid scrambling.
- This mousse can be made a day in advance — just cover and chill until ready to serve.
